Raspberry Jam


  • 7 cups of wild raspberries
  • 35 mL of lemon juice
  • 650 grams of granulated sugar
  • 160 mL of maple syrup
  • 1/2 teaspoon of five spice blend (or five Chinese spice blend)
Ingredients (the maple syrup in this picture cannot be bought it is our homemade recipe)


  1. Mix everything together in a cauldron.
  2. At low heat, cook the mixture until it reaches 220°F (105°C). You must remove the froth regularly with a spoon (remove the pink foam that forms on top of the mixture).

We do recommend you use a thermometer to execute this recipe

If you do not wish to add maple syrup to your recipe you can add a supplementary 225g of sugar. The measurements of the sugar and maple syrup differ because the sweetening power of the maple syrup is 1,4 times the power of sugar. If you do make this change the optimal temperature will then be 219°F (104°C).
